Their craft distillery produces the Eau-de-Vie de Peiti-Lait as a way to recuperate the whey generated by their cheese production and create a sustainable practice. The Eau-de-vie de petit-lait offers an agricultural approach with a finesse worthy of the greatest spirits. The whey is collected, fermented, and triple-distilled. It is then reduced with water that’s coming from the family’s mountain.
